Pasta is just about Sfoglia’s reason to be, the definition of sfoglia is “an uncut sheet of pasta”.  Our pasta fresca, fresh pasta comes in many shapes: pappardelle, rigatoni, penne, and fusilli.   We offer our light-as-a-feather gnocchi, ricotta cavatelli, and goat cheese-stuffed ravioli as well.

Our ready-made sauces are the right complement to not only our fresh pasta but also the dry, packaged pasta that we carry.  Setaro from Naples and Latini from Umbria are the labels that we’ve chosen for their excellence.

Our staff will help you choose the appropriate sauce for the pasta you select, or vice versa.  Bolognese, Pomodoro (San Marzano), Apulian lamb ragout, pesto, and a special butter from Reggio Emilia, Montanari e Gurzza, to brown and toss with the gnocchi, are the sauces that are always on our shelves.

Find various risi, rice in the shop.  Canaroli and Vialone Nano for the perfect risotto and the seductive riso Venere, black rice from Piemonte.  We stock farro, as well.  You might want to use this antique grain the next time you want to make a risotto and make a farrotto  instead.
